Dr. Diez is interested in hosting students with diverse background in applied biological sciences related to food production and microbiology. The student will be working on a summer project aimed to identify antimicrobial compounds with potential application for control of molds in foods and food related environments. REEU students will work closely with senior researchers in Dr. Diez’s laboratory to conduct microbiological experiments to identify and assess the effect of chemical compounds and biological interventions to reduce the presence of molds in food commodities such as peanuts and in processed foods such as yogurt. Students will receive interdisciplinary exposure to food microbiology related research areas.
